Spanish Omelette with a twist!

Spanish omelette (with a twist) Spanish tortilla is a popular Spanish recipe that is widely eaten in all Spanish speaking countries. It is made with eggs, olive oil and potatoes mainly and sometimes with onions added in it too.
But I’m preparing it with Mutton, tomato and butter to give it a relishing twist!
You can skip mutton if you want but believe me it makes the meal rich and filling.
It tasted unbelievably fantastic. By adding a generous amount of butter made the dish aromatic and palatable.
Try this at home and you’ll want it again and again!

Ingredients
1. Eggs - 5
2. Potato – 1 large
3. Onion – 1 large
4. Tomato – 1 medium
5. Butter – 4 tbsp
6. Red chilli – 1
7. Pepper powder – 1 tsp
8. Cumin powder – 1 tsp
9. Ginger garlic paste - 1 tsp
9. Leftover goat curry – 2 tbsp
10. Coriander leaves for garnish
Method
Chop potatoes, onion, tomato and red chilli into fine pieces
In a skillet add 2 tbsp butter and the chopped onion and red chilli and cook on high flame until onion softens
Add the chopped potato and cook on medium to high flame. Close the lid for 5-6 mins or until potato becomes soft
Add tomato (optional) and Ginger Garlic chopped or as paste, give a quick stir and close the lid for another 5 mins
Ingredients must’ve become soft and combined well. Add an extra blob of butter for flavour
Now add the leftover goat or chicken (optional) by quickly mashing it with your hands or you can use a knife to chop it as well
Stir everything so it combines perfectly
At this time turn off the flame
In another bowl add eggs and salt and beat well
Add the cooked mixture to the beaten eggs and mix
In the same skillet add a tbsp butter and pour the egg mixture
Close the lid and cook for 10 mins
Open the lid and flip the omelette using a plate so that the top side cooks
Cook this for 5-6 mins
Transfer it into a plate and cut the omelette into pieces
Add coriander leaves for garnishing
Very tasty and incredibly healthy Spanish omelette with a twist is done!

Saute onion and dried red chilli

Chop potato and tomato

Saute potato with a blob of butter

Add in tomato and cook until soft

Add pepper and cumin powder

I’m adding leftover mutton gravy from lunch

Add butter again

Cook everything thoroughly

Beat eggs

Add in butter on skillet

Pour the mixture on pan

Close lid and cook

Flip over the omelette using a plate

Cook the other side

Amazing Spanish omelette with meat is ready!

Cut and serve

If you want a thick omelette, use a small width pan
Look at the texture
